Romantic weekend in Brighton....Can u help out?

My boyfriend is taking me away for my birthday.
He says Brighton is not the most romantic of places and that we should go to Rome or somewhere, but id love to just go down to the coast for the weekend, plus i dont want him spending too much money.

So we compromised, we go to Brighton but it has to be a lovely hotel.
Does anyone know any nice hotels.
Lovely rooms, perhaps with a nice bath and bathroom etc.
4 or 5 star etc

Also wat is there to do in the day time?
Any recomendations of where to eat?

We want to make this a really lovely weekend, but as neither of us have been before we need some advice.....Mainly on where to stay.
